Last year I snagged the fabulous, kitchen companion, the Instant Pot, on Amazon Prime Day. It’s been one of the best purchases I’ve ever made. If you haven’t heard of the Instant Pot, let me tell you a little about why it’s so awesome.
It can cook frozen chicken in minutes! (I’m pretty notorious for forgetting to thaw meat ahead of time.) It cuts cooking time in 1/2 for potatoes too. It doubles as a slow cooker and rice cooker. It makes many recipes one pot meals. It can cook anything from cakes, to the perfect, hard-boiled eggs. And oddly enough, it can even make yogurt!
Since it’s arrived on my doorstep, I can honestly say I use it 2-3 times a week and sometimes more. It’s truly my favorite kitchen tool and would be a permanent fixture on my countertop, if it wasn’t so large. So what do I cook? Let me share our favorite, Instant Pot recipes.
Coca Cola Chicken
This one is a family favorite that we adapted for the Instant Pot. I use 5-6 bone-in, chicken thighs; 1 cup of barbecue sauce; and 1 can of Coca Cola. Cook on manual, high pressure for 12 minutes. Manually release pressure and serve over rice. It’s delicious!

Coconut Curry Chicken
Similar to Coca Cola Chicken, we use the 5-6 bone-in, chicken thighs or legs, 1 can of coconut milk, and a teaspoon of yellow curry powder. When using frozen chicken, I cook on manual, high pressure for 12 minutes. Manually release pressure and serve over rice.
